Add ability to override editorTemplates

It would be great to be able to override editorTemplates. Currently there is an ability to create new ones, however, sometimes we might just want to add a option field like "maximum-number-of-slides" to one of the current OOTB versions. If we do this now, we have to create a new one and then override every ootb widget/component to swap swap it in which is easy enough but complicates the upgrade process and probably reduces performance ever so slightly.
